First Class
• CHICKEN BALLOTINE & Beetroot Gnocchi
• Mise-en-place
• Includes basic knife skills
• Cooking Methods : poaching, shallow frying, steaming
• Professional ways to do different vegetables for example slicing onions, peeling ginger, chopping garlic, and different garnishes to enhance any dish

Second Class
• Individual BEEF WELLINGTON & Wild Mushroom Risotto, Asparagus & Hollandaise Sauce
• More advanced knife skills
• Different vegetable cuts, eg chiffonade brunoise, batonnet, paysanne, jardinière, julienne
• Cooking methods: panfrying, sautéing, baking
• The effects of heat on different types of food, eg protein coagulate, starches gellotinize, sugars caramelize, water evaporates, fats melt and examples

Duration: 3 hour Class : 11h30-14h30
• 30 min: Introduction, Dish Description & Cooking Techniques involved
• 2 hours: Hands on practical experience
• 30 min: Discussion and Enjoy your meal!

Where: Crystal Lagoon Lodge, 52 Casos Way, Calypso Beach, Langebaan, South Africa

Weather: Come rain or shine, the course will proceed, it is not weather dependent.
What to Wear: We provide an apron, wear something comfortable to cook in, and comfortable shoes.
Things to Bring: You don’t need to bring anything extra with you to cook with. You may bring a plate should you order an extra meal.

Guests or Spectators: We do allow spectators to join with prior arrangement, at 50% of the course price.

Tariff:  R400 per class

• R300 per session for a 5 class course
• R275 per session for a 10 class course
• R200 per session per person (group of 4 for 5 classes)
• R300 per session per person (group of 2 for 5 classes)
